Have a hankering for a delicious salad that’s a zip to prepare, and will make your loved ones swoon?
Try this Holiday Salad, by George Farrar, owner of Taste: Oil, Vinegar, Spice, with shops in Fredericksburg and Culpepper, VA.
“While this was originally crafted for the holidays, this salad is perfect year-round,” Farrar knows. “Not only is it delicious and beautiful on the table, but your family will think you are a genius.”
1/3 cup Pumpkin Spice or Cranberry Pear balsamic vinegar
1/3 cup Blood Orange olive oil
1 tablespoon sugar
1 teaspoon cumin seed
2 cups shredded red cabbage
2 cups shredded green cabbage
1 cup walnuts, coarsely chopped
1 cup dried cranberries
1/4 cup red onion, thinly sliced or coarsely chopped
1. Mix balsamic, EVOO, sugar, and cumin seed together for the dressing.
2. In a large bowl, combine the remaining ingredients.
3. Add dressing and toss thoroughly.
4. Cover and refrigerate about 3 hours before serving.
Note: The dressing will keep about 5 days when refrigerated, so it is a good make-ahead dish.
